Recipe

In a large frying pan, heat oil over medium heat. Cook onion, celery and garlic in oil; stir until soft. Add prosciutto and vodka. Simmer until almost all liquid has evaporated.
Add passata, herbs and chillies. Simmer for 10 minutes.
Stir in single cream, and heat for 3 minutes.
Meanwhile, cook pasta in boiling salted water until al dente. Drain. Toss penne with sauce and serve immediately.

  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 4 tablespoons olive oil
  • 100g (4 oz) thinly sliced prosciutto
  • 175ml (6 fl oz) vodka
  • 1 (700g) jar passata
  • 1/4 teaspoon dried oregano
  • handful chopped fresh parsley
  • 1 tablespoon dried basil
  • 1/4 teaspoon dried crushed chillies
  • 1 (284ml) pot single cream
  • 1 (500g) pack penne pasta
