Preheat oven to 150 C / Gas mark 2.
Beat egg whites until stiff, add cold water and beat again. Add sugar very gradually while still beating.
Slow beater and add vinegar, vanilla and cornflour.
Place on a baking tray lined with baking parchment and bake for 45 minutes. Turn off the oven and leave to cool in the oven.


  • 3 egg whites
  • 3 tablespoons cold water
  • 200g (7 oz) caster sugar
  • 1 teaspoon distilled cider vinegar
  • 1 teaspoon vanilla extract
  • 3 teaspoons cornflour
